Protein cookies are by far a go to choice in this industry and anyone as fitness fanatic as us have had a hand a crafting the perfect protein cookie. What's more is both these protein contain a low carb/fat/sugar content while maintaining a healthy high 21g of protein.
What you will need:
- 1 cup all-natural peanut butter
- 1/2 cup coconut palm sugar
- 1/2 cup whey protein powder (a flavour of your choice)
- 1/2 cup self-raising flour
- 2 tablespoons unsweetened cocoa powder (optional)
- 2 large eggs
- 1/2cup mini chocolate chips
How to prep and bake:
- Preheat the oven to 180ºc and spray a baking sheet with coconut oil cooking spray.
- Place all ingredients into a bowl and mix to together.
- The consistency should be similar to cookie dough, if crumbly add 1-2 teaspoons of melted coconut oil or water.
- Spoon out 2 tablespoons of dough into your palms and roll into a ball, then flatten your cookie dough between your palms creating a cookie shape and place it on the baking sheet.
- Bake for 10-12 minutes.
- Allow to cool for 15 minutes before removing from the pan so that they don't break in half.
