Low Carb Salad Dressing

Summer maybe almost over but it's always hot somewhere. Give this salad and salad dressing a go this year.
What you will need:
  • 2/3 cup MCT coconut oil
  • 1/3 cup olive oil
  • 1/3 cup vinegar
  • ½ tbsp raw honey
  • 1 small garlic clove crushed
  • ½ tsp oregano
  • 2tbsp lemon juice (fresh)
  • Pinch of sea salt
  • Pinch of black pepper

 

 Dressing Prep:

  1. Whisk all ingredients in a bowl until combined thoroughly.
  2. Allow dressing set for an hour before refrigerating.
  3. Gently shake before use.

 

Salad Idea:

  • Mixed leafy greens
  • 1 small radish finely sliced
  • 1 tbsp pomegranate seeds or peaches
  • Handful small cheese blocks or crushed feta
